IIRC someone on the previous existance went round all the light fittings on the top floor putting sealant around the area where the wires came from above (I presume the attic which was nt at all sealed - I believe it improved matters but no idea how much.

I think you need to work backwards to a certain extent: How much HW do you need and at what temperature and how quickly (obious lmitation being the CW supply)? If you need 150L at 40C in 10 mins for a bath or example!

You would normally expect a 2.58kWp array to produce upto 2.58kW. The temperature of the panels would have to be as specified in the panel documentation and the insolation usially 1kW/m2. If the weather is very cold then you might get slightly more, if very warm less - again the panel documentation ...

If they sometimes lable 25mm2 cable as 35 then maybe they are supplying 25mm lugs marked as 35 to match the iffy cable?

I do find the Ultra Processed label irritatingly unhelpful though. Firstly, it's still more often the case that it's the ingredients that are problematic, not the processes. I believe you can have more than one battery bank with Victron - try searching for "victron cascade"
Victron also do a 250v dc charge controller, ut it is not clear to me how you are looking to configure things -but that may be due to something I drank
