I seem to remember that S04 & US05 were fast, reliable dried yeasts and ripped through a wort quickly. 05 was my choice before i went onto liquid yeasts.. Very clean, little diactyl, didn't drop too low so reasonable body remained.

Two gallons of Elderflower started. Didn't,t have any wine yeast so used a mixture of bread yeast and saved beer dregs from my other post on beer yeast. Latest date set for glazing going in and completing is now 10th to 13th June. At least swmbo will be in Turkey, stress free for her.
