Looks great!

Mine has a register plate, flat sheet metal fixed above the stove with liner protruding and mine was filled with vermiculite from above.

Do you mean the register plate JB ?

"A register plate is a metal sheet that’s installed at the base of a chimney when a stove is installed within an existing fireplace. A register plate seals the throat of the chimney for aesthetic purposes and to ensure that all airflow within the chimney is going through the stove."

The fire place you took out and the Carpet instantly reminded me of my early childhood home Ecogeorge :D my parents had exactly the same concrete and tiled surround and a similar pattern carpet  I remember whenever anyone dropped something moderately small on that carpet it was a devils job to find it again, mum loved it though as it "wore well" and "hid stains and damage" which is Yorkshire for "right good value"

Nice job!

An update on the dehumidifiers. The moisture level of the house seems to now be stable. We are collecting around 1 ltr per day from the downstairs unit with the upstairs unit collecting only a dribble.

I've set upstairs unit back from 50% humidity to 55% humidity to see if it even kicks in. I think the downstairs unit is catching it all (which Is made up of one or two washing loads on dryers, cooking steam and ourselves).
