Latency is not a problem with Starlink in my experience, my neighbour uses it for gaming and says it is good. We also have copper at a max of 3.5 Mbps and have been told we will have FTP many times by openreach. (They couldn't organise a pxxxxup in a brewery though). Last time I asked I was told we will be able to order it in Jan 2025. I've been using a phone in the loft, with a 3 sim card in it and set on Hotspot for additional bandwidth for years. From my recent experience with them I think they probably could, it would just take 4 months with about 3 attempts before they could actually manage to get the beer out of the barrel and into the glass!
(they did pay me around £300 compensation for taking so long about my fibre connection though, so I'll be in credit until early next year).

I could probably get a half-decent signal in the loft if it wasn't for the 2 layers of foil-backed Kingspan..
