I'm trying out new non meat product (or new to me, never been a fan of quorn due to it being dry, but thought i'd give it a go as it was in the fridge & reduced) part of my cut down on meat in general, & reappraise what I thought sucked maybe 20 years? ago.

Seeing as F-wit humans are wrecking so much planet biodiversity & animal welfare being in the pits for so much of what is available.

That is an article regarding how to identify an ultra processed food, authorship attributed to several including the guy who wrote the NOVA classification system you wrote.

It does not state that quorn is an ultraprocessed food. In fact there is an argument that quorn itself, before it is turned into anything like a fake burger or nugget, would be class one. That it us grown in a vat makes no difference to the classification in NOVA. What is bought frozen in a bag, formed as fake mince etc would be class three because it does have some salt etc added to it, but to claim the basic quorn is class four would be nonsensical.
