Have the occasional beef animal butchered (not for 2 yrs - none in pipeline :(
but do enjoy vacuum packed portions of solid white fat ........

Sounds like you have good butchers, I will look for one locally (well nearest is 6 odd miles away) ..what's the ballpark on this these days?

But, dripping’s only dripping when it’s got the jelly at the bottom. And why waste it on frying - spread thinly on toast with S&P, a lovely ‘sinful’ pleasure.
