Cafe seems a good place to post this...
I looked at a German cookery book this afternoon, in the index for the meat section after Bacon, boiled with beans and pears, there is Bear fillet in burgundy and then Beaver's tail! :shock:
Date was 1953 reprinted as a paperback in 1971, but I'm surprised those recipes were current even in the 1950s.

Think Bear is still a thing with the huntin’ fraternity in the states.

It is. But I was always taught to eat herbivores not carnivores/omnivores. Can't remember why but bear in Alaska eat a whole bunch of salmon, I guess that concentrates the mercury!

I was also going to make a comment about eating Beaver, but I thought that would lower the tone too much ;)
