Cafe seems a good place to post this...
I looked at a German cookery book this afternoon, in the index for the meat section after Bacon, boiled with beans and pears, there is Bear fillet in burgundy and then Beaver's tail!
Date was 1953 reprinted as a paperback in 1971, but I'm surprised those recipes were current even in the 1950s.

It is. But I was always taught to eat herbivores not carnivores/omnivores. Can't remember why but bear in Alaska eat a whole bunch of salmon, I guess that concentrates the mercury!

I was also going to make a comment about eating Beaver, but I thought that would lower the tone too much
