Aww I thought you had a secret solution there JB, :(

My preferred cooking method is pan fried and still pink in the middle for a lovely soft melt in the mouth taste ........

oh my, I might be off down the butchers at the weekend !

A decent bolognaisse type sauce in the movies (goodfella's) for instance is a tri mix of meats for a reason never explained...

But..
"Bolognese is a meat sauce and the choice of meats is one of the most important elements. At No. 9 Park, Lynch used a combination of coarsely ground veal, pork, and lamb. Why? Veal is rich in gelatin, but low in flavor. It gives the finished sauce a silky, smooth texture. Pork is high in fat, with a moderate amount of flavor. That fat emulsifies nicely into the finished sauce. Finally, lamb has a ton of flavor, but a rather coarse texture. By combining all three, you get a mixture that's flavorful, fatty, and silky"

Yes it's not liver chunks but understanding may keep your liver from shrivelling, as well as way better bolognaisse (spelling vaiant optional)

Which reminds me, I must try air fryer bacon wrapped balls of lambs liver sometime soon.

WT1 offline, check.
Grey skies & sleet, check.
2 degs outdoors, check.
Arsed up charging & started day with 27% stack soc, check.

I absolutely love that WBS, GCH has run for 20 mins this morning in both zones. The WBS has been kettle, cooker, tumble dryer and GCH replacement all day long.

Ended day with 37% soc with SWMBO running the washing machine & iron so not bad. That WBS though, absolutely, never fail reliable. Even when I'm not. :D

My woods man offered me some Holm Oak last week - having heard horror stories of seasoning evergreen oak, I asked what it was like ?

Dunno - haven’t had chance to check it.

Took a chance and got a 2m3 load.

Dense as anything - about 3 times the weight of Ash for a similar log.

Does it burn ? Oh yes - be spot on for next winter.
