How much would he have needed to invest in order to save, or make, that claimed £3000 or so in the 2nd year? Sounds like a hell of a lot.

Well, he got 4 times what I did in the first year, so he must have put about £7500 in. I would say £2k in the second year is a reasonable guess, £3.5k is very optimistic!

Its a convertible issue (at discount) to convert to equity when they plan to raise a larger amount of equity next year for their alleged expansion into Europe. It qualifies for EIS (30% tax relief) but its far too risky for me.
Some quite interesting posts on their forum were Sarah (CEO of Ripple) has answered some questions. Like regarding the 120% ownership rule, she says the Coop's have been set up with this rule agreed with FCS approval and would be difficult to change. They believe they will be going more mainstream in due course to acquire new customers. And may also become FCA registered which would enable them to offer more standard investment type offerings in future.
