Our local butcher is a friend - he dry ages beef in a proper ageing cabinet. Ours was 2 weeks from slaughter, then 3 weeks in the cabinet.
We cooked it for the butcher and his wife - no pressure.
Again, not cheap, but a nice cut of meat for the bbq and to share with friends.

I am not black catting you but we get 56 day steaks and if we meet ill tell you a great story from the meat inspector who supplied to Savoy in London. Plenty of eyewatering priced thru cheap aged steaks in French supermarket meat caves. (Super U in Chamonix & various local butchers there)
Wife, kid, & myself keep saying we will, try a few, but the sous vide wand is likely to have been forgotten to be packed when we do remember, not many opportunities since covid either.

Well lads, after an 11 day delay the cooling unit finally made it from Mugla to Turunc via Marmaris and it was worth the wait.
The pads are I think still.pulling up from the tank, nonetheless we watched the lcd display drop from 34 deg to 25. It has settled at 26 degs with a background air temp of 36 deg.
Pulls 110W and has a remote, that'll do. It's a .
The reservoir holds 26 ltrs and even as I type it has just ramped up in chilliness, I guess the pads are filling nicely.
There is no temperature control, it gives what it gives. Very pleasant little outdoor bubble we are sitting in. Will try indoors tomorrow.

Slowly slowly catchy monkey, build it all over time eh?
We are now down to speed 1 out of 3 on the fan and the temp gauge indicates 25 degs. Background is now 35 degs.
I am very happy with this unit, I worried that stepping down from the HUGE units that are running in the restaurants would negate the benefits, not at all. This product certainty has a place in the cooling world.

Trying Billi's idea, kind of. Pre cooling water in the freezer before it goes in the hopper. We are going through around about 1 UK gallon of water per hour. In my pursuit of engineering enquiry I feel a need to drive that airflow temperature down to 24 degs and achieve an optimistic 11 deg separation between background air and unit pushed.
