I'm hoping the 1500W kettle (which I've just bought) should work OK, and it's only on for 5 minutes at a time.
For the induction hob, going to a smaller inverter wouldn't help in terms of running induction loads, but it would make appropriate wiring from the battery easier.
The 2kw inverter has already arrived, so I need to make it work somehow.

I think I will try the induction hob in the house and see if it modulates down, or if it pulses at full power to achieve the lower settings. If it pulses at full power I might have to try it on the inverter and monitor the current usage, with plan B to buy a lower power version to make sure it doesn't cause problems.
Interesting - turns out, the induction hob is a 2000W version.
With it plugged into a WiFi power plug, seems that it does pulse the power, but at 1200W - so anything below 1200 pulses to maintain the average power.
It's not brilliant, when frying, you can see & hear it pulsing - it sizzles, then goes quiet.

I've had it since the end of last year, so probably too late to return it. It was officially as an extra cooking facility for a very full family Christmas (didn't actually get used much), but unofficially with half an eye on Van mk2

We have a single ring plug-in induction hob. We bought it to use while our kitchen was being remodelled. And frankly it is shit. The lowest setting is too high, and it pulses dramatically (as you describe). However the Neff induction hob we fitted in the actual kitchen is much better, it still pulses on lower settings, just much more gently, and the lowest setting is very gentle indeed.

Same here, we love our main Sterling induction hob on the oven - I was hoping the portable one would be similar

Wow! Here we go - 315Ah battery kit from Fogstar 😁
I might be reading the assembly instructions a couple of times before I start playing😜

Somehow bigger than I expected, but no reason why, it's still a 4kWh battery, even though it's 'only' 12V

Go slow and steady! Put a carrier bag over each cell while they're sitting there. An accidental short will be very dramatic indeed!
