I've always used SMARTY for data. The month-month nature of it makes it very affordable if you want some data for a holiday away, and 3's network coverage seems pretty decent. The SIM otherwise sits in the 4G modem waiting to be used.

I wonder how long you can store a sim without paying anything before it gets deactivated...

For regular phone stuff I've tended to use giffgaff for my personal number, and currently use Plusnet Mobile (EE) for my work number.

Plusnet sucks abroad, their customer service team are well versed liars.
Avoid if you holiday overseas.
